M\u00e5nga ogr\u00e4s som man hittar i tr\u00e4dg\u00e5rden \u00e4r b\u00e5de goda och nyttiga.<\/strong><\/p>\n

Nog \u00e4r det lite lustigt att n\u00e4r man ska vara nyttig idag s\u00e5 \u00e4r det ogr\u00e4s man ska \u00e4ta. Br\u00e4nn\u00e4sslor, maskrosor och kirsk\u00e5l har man alltid sett ner p\u00e5 litegrann. Kanske \u00e4r det just deras sprittande livskraft och att de \u00e4r s\u00e5 l\u00e4ttodlade, eller snarare att de odlar sig sj\u00e4lva som g\u00f6r att de inte har n\u00e5gon status. Att k\u00f6pa n\u00e4sslor eller maskros i torkad form p\u00e5 h\u00e4lsokosthandeln d\u00e4remot kostar pengar. R\u00e4tt f\u00f6rpackning kanske? Jag \u00e4ter ogr\u00e4s mest f\u00f6r att jag tycker att det \u00e4r gott.<\/p>\n

Idag gick jag ut p\u00e5 bakg\u00e5rden och plockade n\u00e4sslor, kirsk\u00e5l och l\u00f6ktrav f\u00f6r att laga kv\u00e4llens middag. Den klassiska indiska aloo saag lagas f\u00f6r det mesta med spenat nuf\u00f6rtiden men ordet saag syftar egentligen bara p\u00e5 vilken bladgr\u00f6nsak som helst s\u00e5 jag l\u00e5ter potatisen i r\u00e4tten f\u00e5 s\u00e4llskap med n\u00e4sslor och kirsk\u00e5l ist\u00e4llet. Det k\u00e4nns v\u00e5rigt och svenskt i denna urindiska r\u00e4tt.<\/p>\n

6 dl potatis, skuren i tumstora bitar<\/p>\n

Ca 150 ? 200 gram blad av valfri sort<\/p>\n

2 tomater<\/p>\n

2 vitl\u00f6ksklyftor<\/p>\n

1-2 msk sm\u00f6r eller olja (eller ghi, om du har det)<\/p>\n

1 tsk svarta senapsfr\u00f6n<\/p>\n

1 tsk hel spiskummin<\/p>\n

\u00bd tsk mald svartpeppar eller paprikapulver<\/p>\n

en knivsudd ren asafoetida (hing)<\/p>\n

\u00bd tsk gurkmeja<\/p>\n

1 tsk curry<\/p>\n

1 dl yoghurt<\/p>\n

1 ? 2 tsk salt<\/p>\n

Ev. \u00bd tsk garam masala<\/p>\n

Vatten<\/p>\n

B\u00f6rja med att mala bladen med tomat och vitl\u00f6k i en mixer till en j\u00e4mn smet. Hetta upp oljan eller sm\u00f6ret i en kastrull och tills\u00e4tt sedan asafoetida, senapsfr\u00f6n och spiskummin. N\u00e4r senapsfr\u00f6na b\u00f6rjar poppa \u00e4r det dags att l\u00e4gga i potatisen. L\u00e5t potatisen steka till den f\u00e5r lite stekyta, H\u00e4ll nu i gurkmeja, svartpeppar (eller chilipeppar) och salt. Tills\u00e4tt nu de malda bladen och l\u00e5t steka med i n\u00e5gra minuter. H\u00e4ll sedan p\u00e5 vatten och l\u00e5t koka p\u00e5 medelh\u00f6g v\u00e4rme under lock till potatisen \u00e4r mjuk. Tills\u00e4tt nu yoghurten och r\u00f6r om och l\u00e5ta alltihop koka ihop. N\u00e4r r\u00e4tten \u00e4r f\u00e4rdig att servera str\u00f6 eventuellt \u00f6ver lite garam masala.<\/p>\n

Det \u00e4r j\u00e4ttegott att tills\u00e4tta t ex dill i bladen. F\u00f6r lite extra knorr p\u00e5 r\u00e4tten tills\u00e4tt g\u00e4rna n\u00e5gon tesked rivet citronskal eller lite citronsaft vid servering. Personligen \u00e4r jag v\u00e4ldigt f\u00f6rtjust i kombinationen s\u00f6tt-kryddigt s\u00e5 jag tycker om att l\u00e4gga i en matsked russin samtidigt som jag l\u00e4gger i bladen i r\u00e4tten.<\/p>\n

Jag f\u00f6rs\u00f6ker ta plantor d\u00e4r blommorna inte slagit ut \u00e4nnu. Blanda alla ingredienser och l\u00e5t st\u00e5 och dra en timme i kylsk\u00e5pet s\u00e5 att smaken hinner s\u00e4tta sig.<\/p>\n
